4 Reasons You Should Ditch Dairy & Eggs

Folks always say to me, "I would go vegan but there's no way I can give up cheese or scrambled eggs."

I get it!

Since dairy & eggs are so prevalent in a standard American diet, it's hard for many of us to imagine living without these foods.

When I started my own journey in 2010, I wasn't sure if I could do it long-term because I loved ice cream and baked macaroni & cheese so much.

These days, it's easier than ever to embrace a vegan lifestyle without feeling deprived of your favorite dishes!

I promise once you find a replacement that works for you, it will be less challenging to move away from harmful & unnecessary animal products.

Here are 4 reasons you should just say NO to dairy and eggs:

  • For your health -- high blood pressure, heart disease, high cholesterol & certain cancers risk is higher for people who consume animal products.

 

  • Dairy products aren't meant for humans -- Cow's milk is made for a calf..not for us. Have you ever thought about why we eat & drink the secretions of another species? It just doesn't make sense! Plus, dairy is just fat and designed for a calf to go from about 80 lbs at birth to over 400 lbs in just 8 months.
  • Protest factory farming and animal cruelty -- Even if you're not an animal lover, the suffering of animals raised for food might be the most offensive and heinous of all animal farming. Read more about this industry here and here

 

  • Environmental concerns -- Animals raised for food are huge contributors to global warming & pollution.

 

With so many awesome replacements for every dairy and egg recipe out there, there's no better time than now to embrace a healthier and more compassionate vegan life.

Easiest Way to Get Kids to Drink More Water - Infuse It, Baby!

We all know how important it is to drink lots of water but....sometimes it's easier said than done.

Maybe your kids find water boring, so they prefer juice or soda over it. I know I did as a kid.

The easiest way to get your kids to drink more water (maybe you need more motivation, too lol) is by infusing it with frozen or fresh fruit!

In the short Instagram video below, I share a quick tutorial using about 3 cups of frozen berries, mango and pineapple and about 8 cups of water.

I got the glass water dispenser from Bed Bath & Beyond last summer and it's a perfect additional to any kitchen counter.

Depending on how long the water sits (which usually isn't too long for us), I use the fruit in a smoothie later.

Another one of our favorite water combinations is cucumber slices, strawberries and mint -- so refreshing!

You can also just add fruit to your kids' water bottle for school and in your own cup before heading to work.

Mushroom, Spinach & Mashed Potatoes Recipe | What's for Dinner # 5

If you're just getting started on a vegan journey, I know how important it is for the food to be familiar, comforting and flavorful.

This dinner recipe delivers in all of that -- mushrooms, spinach and mashed potatoes? Yes, please!

If you want to save a little time, you can also use rice, pasta or quinoa in place of the mashed potatoes.

Mushroom, Spinach & Mashed Potatoes Recipe

Ingredients (Serves 4)

    For potatoes
    • 2 lbs Yukon Gold potatoes, washed, peeled and cut lengthwise into quarters
    • 1/2 cup unsweetened almond or soy milk (add more if necessary)
    • 1/4 cup vegan margarine (Earth Balance and Smart Balance are options)
    • 1 teaspoon salt (1 teaspoon more salt for the cooking water)
    • 1/2 teaspoon black pepper
    • 1 teaspoon garlic powder
    For Mushrooms & Spinach
    • 1 tbsp oil
    • 1 medium yellow onion
    • 1 lb mushrooms of your choice, chopped
    • 3 garlic gloves, minced
    • 1 teaspoon cumin
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 4 handful of raw spinach

    Instructions

    In a large pot, add potatoes then cover with water and salt.

    Cover with lid and bring to a boil. Cook until soft.

    While the potatoes are cooking, in a large skillet add oil.

    Then saute onion for about 7-8 minutes on medium heat until translucent.

    Next, add in mushrooms and cook for about 10 minutes, stirring occasionally.

    Mix in garlic, cumin, salt and black pepper.

    Stir in garlic and continue cooking for about a minute.

    Then add in spinach, stirring frequently until wilted.

    Turn off heat and place skillet to the side.

    Once the potatoes are done, drain the water and place back into the pot.

    Next, add in almond or soy milk, vegan margarine, salt, black pepper and garlic powder.

    With a potato masher, mash the potatoes until you get your desired consistency (try not to over mash because it will make the potatoes have a gluey texture).

    Adjust seasoning for the potatoes and mushroom mixture, if necessary.

    Enjoy!

    What Should I Do If My Kids Don't Like Vegetables? | Q&A

    I answered this question on my YouTube channel the other day, but wanted to share it here because I know so many people struggle with getting their kids to eat vegetables.

    Q: It seems like you are the only vegan African American woman on YouTube with older children that can relate to me. I am new to eating a plant-based diet and I want to transition my two children whom is 9 and 8 years old. I'm having a hard time with my youngest because he only like corn, carrots, green beans, peas and lettuce. Any advice?

    A: I can relate! My son Elijah didn't like any vegetables when we started this lifestyle.

    Here are some tips....

    • Make sure you keep putting vegetables he doesn't like on his plate (even if it's just a tablespoon) because exposure is so important. 
    • Just say no to bland and mushy veggies! Be sure to season your vegetables and don't overcook them - A little salt, pepper and garlic powder goes a long way -- Roasted, lightly steamed and sautéed vegetables are much more appealing.
    • Let your son explore the produce department once a month.  Encourage him to pick out something to try, then go home and cook it together. It's hard for most kids to turn down food they cooked. lol.
    • Add about a cup of fresh spinach (spinach is a good start because you can't taste it) and other greens to smoothies you make at home. This is a delicious and sneaky way for him to get more greens.  Check out Green Simple Smoothies' Instagram page for recipes.
    • Have fun, be gentle with him and I promise it get better.

    The fact that your son likes green beans and peas is amazing! Most people don't even like those vegetables. lol
