EASY Vegan Meal Idea + Why Go-To Meals Are Important | No Excuses #3 (VIDEO)

Ever have those days when you just don't feel like cooking?
Sometimes my days turn into weeks.

I think this is normal...especially when you're busy with family and work.

It's so important for you to build go-to vegan meals into your rotation, so you can stay on track with your vegan journey .

Some of our go-to meals are tacos, spaghetti, vegetable stir-fry, lentil soup and the Gardein chicken tenders featured in my latest video below.

This meal is super simple - Gardein tenders, Roasted potatoes and steamed broccoli seasoned with salt and garlic powder.

You can find the tenders at Target, Whole Foods, Safeway and sooo many other regular grocery stores these days.

Back to establishing go-to meals...

  • Think about what some of your own go-to vegan meals (3-5 is a good aim) will be for those, "I cant be bothered" days.  
  • Tacos are an excellent start because you can mix and match the fillings and toppings.  
  • Jot your go-to meal ideas down on paper (or as a note on your phone) and make it happen!

How to Order Pizza As A Vegan + Make It At Home

One of the biggest myths about being on a vegan journey is that you have to "give up" all of your favorite meals.

This simply isn't true.  Pizza is a perfect example of this!

It will probably take you a few times of eating pizza without cheese (or eating it with vegan cheese) to get used to the difference. 

But vegan pizza is different in a great way. You will learn to appreciate pizza more for amazing crust, sauce, and simple fresh vegetables.  

In this post, I will break down:

  • What ingredients to avoid to make your pizza vegan
  • How you can enjoy vegan pizza while dining out
  • How to make your own homemade pizza
  • How to baby step your way to vegan pizza - It doesn't have to be all or nothing to get started!

What ingredients to look out for

Just to be clear, vegans don't consume any animals or animal byproducts (dairy, eggs, honey, etc.), so most of these ingredients are already on a conventional slice of pizza.

Cheese is the most obvious ingredient that we want to avoid, but there's also a chance that your favorite pizza sauce contains milk and that the pizza crust contains eggs and/or dairy. 

The good is news is, a lot of pizza dough/crust is naturally vegan since it's usually just made from flour, yeast and water.

Pizza sauce is also usually vegan - made from pureed tomatoes, onion, garlic and spices.

You just want to always look at the list of ingredients and/or ask your server for assistance.

 

How to order vegan pizza while dining out

Since so many people have dairy and egg allergies, most places do a great job of labeling all the ingredients in each dish.

Even if you don't see any obvious vegan options on the menu, you can easily make a few simple requests with your server to ensure that your pizza is vegan. Ask him/her to skip the cheese entirely and ask specific questions like, "Is there dairy/milk in the pizza sauce?" "Is there eggs or dairy in the pizza dough?" Don't say, "Is the pizza sauce vegan?" because your server may not be sure what a vegan is. Afterwards, ask for extra sauce and additional vegetables of your choice.

 

Major pizza chains with vegan options

If you're eating at a place not mentioned below, check the company's website or call ahead to find out how you can order your pizza vegan.

  • Papa John's - Their original hand tossed pizza and sauce is vegan and so is their garlic dipping sauce.
  • Pizza Hut - Their "Thin N Crispy" & "Hand Tossed" crusts are vegan and so is the pizza sauce.
  • Dominos - Their thin crust pizza (not the other ones) is vegan and so is their sauce. Also, their Garlic Dipping Sauce, BBQ Sauce, Kicker Hot Sauce, and Sweet Mango Habanero Sauce are all vegan.
  • Little Caesars - Their regular crust and sauce are both vegan
  • Cici's Pizza - Both the crust and sauce are vegan 

 

How to make your own vegan pizza right at home

Make your pizza as normal, but be sure to check ingredients for store-bought items to ensure there's no dairy, meat, eggs, etc.

Vegan cheese has come a long way since I started my own vegan journey in 2010. Don't go into this expecting it to taste exactly like dairy cheese but there are some great substitutes out there.  Also, a little bit of vegan cheese goes a long way, so don't feel like you have to pile it up like traditional cheese.  

Vegan cheese brands: Daiya, Follow Your Heart, Miyoko's Kitchen & Field Roast chao slices

Pizza sauce (so many options out there-this is just a few): Rustic Crust pizza sauce, Classico tomato and basil spaghetti sauce and Ragú Homemade Style Pizza Sauce

Major brands of pizza dough/crust: (you can also use pita bread or tortilla) Trader Joe's pizza dough (in the refrigerated section), Rustic Crust Organic Pizza Originale (towards the bottom of the list on that link) and check out your store-brand option.

Possible toppings: Red onion, bell peppers, jalepeno peppers, fresh basil, Beyond Meat crumbles (replaces ground beef), vegan cheese (several options are listed above), olives, fresh basil, vegan pepperoni (this brand or this one), spinach, etc.

Store-bought vegan frozen pizza

I haven't tried any of these brands of frozen pizza yet.  I just wanted to let you know there are vegan option for frozen pizza out there...

 

Baby step your way to vegan pizza

It doesn't have to be all of nothing to get started on this lifestyle.

Here are some quick tips to slowly transition to vegan pizza....

  • The next time you order pizza, continue to use dairy cheese but instead of sausage or pepperoni, replace it with olives, sautéed mushrooms and/or spinach and other vegetables.
  • For the following pizza, ask for a lot less cheese and continue to pile on the vegetables.
  • Finally, get rid of the cheese and see if your favorite pizza place has a garlic oil sauce to put on top of your pizza. In my experience, garlic oil (usually vegan, but check the ingredients to be sure) or a drizzle of olive oil, etc. will give your pizza that greasiness that cheese captures. 

Be open to experimenting and enjoy this new (and better) way to eat pizza.

This Tip Will Help You Go Vegan With Your Family

Every.single. meal. was a debate when we started our vegan journey back in 2010. Even though my husband thought it was a great idea for me go vegan, he still wanted chicken, beef and cheesy pizza on his own plate.

My son, Elijah (the pickiest eater of the 3 boys), only wanted chicken nuggets and french fries.

He didn't even want vegetables on his plate....

I already wasn't the most confident about cooking this new (vegan) way, so listening to chatter from the peanut gallery made me even more insecure.

I won't lie, there were times when I just wanted to give up.  

Change can be hard for so many of us.  

Fear of the unknown, not being sure what to eat, and dealing with complaints can have you even more discouraged.

I promise when you're consistent and persistent the transition will get better!

Our family is living proof of this.
 

TIP ON HOW TO GET STARTED ON A VEGAN JOURNEY WITH YOUR FAMILY....
 

~Replace ingredients to make their favorite meals vegan~

Instead of feeling like you can't eat certain foods anymore, replace them with compassionate and healthier plant-based alternatives.

With my son Elijah, I replaced his love of chicken nuggets with Gardein vegan chicken tenders and roasted his potatoes instead of buying them at a drive-thru.

Here's a very familiar vegan meal you can introduce to your family tonight...
I love spaghetti because it's delicious, filling and inexpensive.
*Ingredients*
-Spaghetti in the box (most of the pasta in your grocery aisle is vegan-be sure to check ingredients)
-Marinara sauce (saute onion, garlic, and dry oregano to add more flavor to your sauce)
-Add vegan crumbles from a brand like Beyond Meat (found at Target and many other stores) into the sauce. You can also use cooked lentils and sautéed mushrooms
Cook and serve like normal and I doubt your family will even question it!

Think about some of your family's favorite meals and how you can make those meals vegan. 

Be gentle with yourself and your family as much as possible as you move forward. Sometimes it can feel like a roller coaster ride, but I promise the transition will get better as get more consistent.

Does the Follow Your Heart Vegan Egg Work? | Review (VIDEO)

I haven't baked in forever, but I had to dust my cupcake pan off to test out the new Follow Your Heart Vegan Egg.

What's the biggest difference with this egg replacement? You can actually scramble it like chicken eggs! Crazy, huh?

Even though I haven't scrambled them yet (not a fan of scrambled eggs), you can see The Sexy Vegan make it here), I had to test the vegan egg in bang bang cauliflower and cupcakes.

All you need is 2 tablespoons of the vegan powder (main ingredients are algal flour & algal protein - see the other ingredients here), 1/2 cup cold water and a whisk (or blender) per egg.

This product is gluten-free, non-gmo and soy-free

Follow Your Heart Vegan Egg - I purchased mine from Amazon (usually sold out fast) but rabbitfoodgrocery.com has it.

Cake mix is from Immaculate Baking Company - I purchased it from Target and used almond milk instead of dairy milk and Earth Balance vegan margarine instead of dairy butter.

Recipe for the Bang Bang Cauliflower - the original recipe is vegetarian and from Kirbie's Cravings. I switched out a few ingredients (and omitted one) to make it vegan.

Bang Bang Cauliflower

Prep Time: 10

Cook Time: 20-30

Keywords: snack vegan

Ingredients (2-3 servings)

  • 1/2 head of cauliflower, cut into bite sized florets
  • 2 cups panko bread crumbs (check label to ensure it's vegan)
  • 2 vegan eggs
  • 1 tbsp fresh parsley, finely chopped (optional, for garnish)
bang bang sauce
  • 2 tbsp sweet chili sauce
  • 2 tsp sriracha
  • 1/4 cup vegan mayo (Just Mayo is a good brand)

Instructions

Preheat oven to 400F.

In a small bowl, dip cauliflower pieces in vegan egg.

Place panko crumbs in a second bowl and then roll in cauliflower until fully coated.

Place on baking sheet.

You will need to use your fingers to press on the coating to help it to stick to the cauliflower bites.

Repeat until all cauliflower is coated.

Bake for about 20 minutes (bake longer if you prefer a crunchy and/or darker coating)

While cauliflower is cooking, make the bang bang sauce.

Add all ingredients into a small bowl and whisk until uniform and no mayonnaise lumps remain. Drizzle over finished cauliflower, reserving additional for dipping.

Garnish with fresh parsley, if desired.
